Quesadillas and Guacamole: without that stupid machine

I know some of you have seen those quesadilla makers. I know you felt compelled to buy one. I also know that this would be a stupid waste of money. Seriously guys, if you want to throw your money away, you might as well make the check out to me right now. Thanks to my new phone I also take all major credit cards, except Discover. Listen people, you DON'T need to get every gadget on "Buy Me Now" TV ok. I can show you how to do this quick and easy and without the extra crap.





What you need:
  • frying pan
  • spatula or tongs

Ingredients:
  • shredded cheese
  • tortillas

For the guacamole:  Go to this link and make a list of what you need.

Step 1: Pan + Medium Heat = toasty tortillas

It's pretty obvious what you need to do here. Put the pan on medium and add the tortilla. Grab a handful of your favorite shredded cheese (cheddar, pepper jack etc.) Give it a moment to melt and top it with another tortilla. Let that seal on top. This will take about 5 minutes or so. Keep an eye on it so it doesn't burn.

Step 2: Flip it baby!

Take the spatula and flip over the tortilla quickly. Do not show fear! Food knows when you're afraid and will break and laugh at you. Look at it right in the face and say, "I own you!!" and FLIP IT! 2 more minutes to lightly brown the other side and then you can plate it, cut it and top it with the guacamole and sour cream. MMMMMMMMMMMMMMMMMMMMMMMM!!!
